elegant & processed

I knew the snow storm was coming, I'd heard about it on the news, along with everyone else. this is the difference between guys and gals...or maybe just between Chris and I.
when it's cold outside, I like to cook and eat. :)
I think "chicken scallopini"...here's the recipe!

side note: the chicken scallopini, which by the way is not a normal meal at the Doke house, was a huge hit with my kids! not to mention a break from our normal routine of chicken!

park perfection

classic Oklahoma weather...it's been in the 40's and 50's the past week but the past 2 days it's been 70 degrees and lovely! it's a blessing, because tomorrow brings 40's again and then lots of snow and ice.
it seems like the entire city of Norman was outside this weekend soaking up the sun!
we met the Ho's and Cochell's for a picnic lunch and play on campus.

the Ho's told us about a yummy cupcake shop on campus corner so we went there for some treats...delicious!
the reason Sophie doesn't have a cupcake on her table is because she ate hers already, in about 3 minutes. nice.
Sulley and Emma were so careful to savor and enjoy their cupcakes. :)
we are grateful for the winter reprieve, and now, bring on the snow!!!

a check up

Emma Rose had her 4 year check up today! we are so grateful for a healthy little girl!
she looked so big getting her blood pressure taken! she's tall and lean like daddy!
40 % in weight
57% in height
Sophie Lynn was very interested and stayed right by sissy's side :)
Alice Elizabeth (almost 4 months)
we should have just brought our sleeping bags and spent the night at Dr. Kuhl's office...we've been there 3 times in 7 days for Emma's ear infection, Alice's virus, and Emma's check up.
after playing at the park, which our kids call "Ella's Park" (First Baptist Park where Ella Rose had her birthday party) on the way home we picked up CityBites cookies...they are SO good and SO big! we had no trouble devouring each of our own cookies!
while we were at the park, I marveled at how incredible moms are, how many hats they wear, how they are a constant supply of energy, love, affection, comfort, and provision for their children.
as I was nursing Alice in the car, I watched a mom rock her baby in a stroller, push her toddler in a swing, and keep a close eye on her oldest child. then Shannon arrived, adorably pregnant watching/playing with Sulley...Kerri chasing Grace while caring for Avery...Brooke, swaddling Lawson in her sling while pushing Asher on the swing. Amazing moms! I am honored to be on this journey with each of you!!!

what a sweet day with my girls! I wish Chris could be with us more during the day so he could soak up as much sweetness and fun as I get to experience! :)

apple tarts with meringue

I have this kid's cook book that I am growing to love. it had a simple recipe for apple tarts with meringue. I'm more of a whipped cream fan but I do love that golden look of baked meringue. :)
the girls had fun mashing and measuring!

we squeezed the meringue out using a Ziploc bag...tasty and pretty!

easy dinner recipe

I forgot Chris had to work very late and I needed to whip up dinner, fast, and with all my lovies at home. no time for standing at the stove, even for 20 minutes.
random ingredients, to the rescue!!!
Pizza Recipe:
- pizza dough (canned, I like Pillsbury)
- jar of sun-dried tomato pesto
- mozzarella cheese
- garlic salt (a sprinkle)

**I grease a 8X8 pan so it's deep dish pizza :)
you just follow the directions on your pizza dough can and viola! dinner is served!

feeling 30 :)

I will be 30 years old next month...how did this happen?
a few weeks ago Chris asked me how I felt turning 30 and I didn't have anything to say and had not given it much thought.
this morning, however, I felt 30 (whatever that means) and realized my feelings of "oh my goodness, I'm going to be 30!"
I was up early to go to a spinning class with my neighbor Kristen, then home to get my lovies dressed and out the door for school, picking up sweet Millie on the way, on my second cup of coffee by 8:30am, home for cleaning, playing, errands, back to school to get Emma...and the day goes on!
today I feel 30 and I LOVE it!
we were stopped at a light for a few minutes and I just listened to all of these little girls giggling, talking, cooing (Alice), and fidgeting. such sweet noises from these little ones!

so a few thoughts I have after the day's activities of feeling like a 30 year old mom are...
- I am excited for what this new season holds!
- my 20's were great, wonderful, life changing, and challenging.
in my 20's I...
- graduated college
- taught Pre-K, Kindergarten, and 2nd grade
- went to Africa
- met, fell in love with, and married my dreamy husband (all in 11 months!)
- moved to Norman
- worked at American Eagle (so random)
- had 3 baby girls
- lost my dad to cancer
- was the children's director for our church
- celebrated 6 years with Chris :)
...
mostly I have found we serve a powerful God who has sustained me, who loves me, and who has blessed me beyond what I could have imagined at 20.
so bring it on 30...I'm ready for you!
(but I'm still going to relish in saying 29 for 34 more days!!!!)

the dentist

Emma had a little procedure done at Dr. Moffitt's office. he clipped the tissue between her gums and lip. she was so cute...they gave her laughing gas and she did just that, giggled! she held perfectly still and crossed her legs like a little lady.
her lip was really puffy and sore for the day but she didn't mind the extra attention!

meg's Top Ten

I love lists. I love making them, following them, organizing them. yes, I know...I am quite nerdy! I don't watch Oprah but do my best to dvr her Favorite Things episodes each year. a list of everything she loves!
on a much smaller scale, I am finding lists of things that help me, make things easier, make things fun, or just stir up my nerdy side! :)

so here is Meg's Top Ten List of a Mommy/Wife:

10. candles...I always have one lit. instant coziness in the house.
9. Giada at Home...I try to catch a few minutes of her show, so inspiring as the cook of the house :)
8. Brian Johnson's "Love Came Down"...we have worn this playlist out. it's so peaceful!
7. Target Rotisserie chicken...I throw it in everything (soup, pasta, tortillas, salad) and that's dinner!
6. my IPOD shuffle playlist for running...I couldn't get the miles in without Beyonce', Will Smith, Fergie, Coldplay...(I know! who listens to Will Smith?...me!)
5. my Nike running tights...while we're on the topic of running, these are my new favorite purchase. l-o-v-e them!
4. Power Bars...great snack that gives me lots of energy to keep up with the 3 princesses!
3. goldfish...tupperware in the car and kitchen
2. baby wipes...I keep a box in every room and car
1. Sonic...happy hour diet coke is my favorite! I look forward to it!

Jon is such a trooper. Sophie would probably rather live with the Kuhlman's than us. :)
the Waggoner's and Boyd's were there too! we had a tasty dinner! I think we could eat there every night!

accessories, accessories

my girls love to play dress up. right now Emma's favorite thing to do is put on every accessory she has, at once. so if you can see, she has on 3 head bands, a crown, 7 necklaces, gloves, a wand...
you can hear her coming!

no accessories for Boo, she's not a fan, but she wanted to have her picture taken. :)

a Gingerbread birthday

the celebration continues for Emma's birthday at Gingerbread! Emma got to bring snack and Show & Tell for her birthday this week! she asked for pink cupcakes with icing and sprinkles...mommy made the mistake of making these while doing bedtime with the girls. so about half the cupcakes turned out. :( so I made a cake instead, later, after the little ones were down. :)

so cute, Beau and Emma were just having a little conversation while they waited. it's so funny to listen to them talk to each other.
Emma: "I love Tangled!" (when the Tangled napkins were passed out)
Beau: "Um, yeah, I don't really like Rapunzel...that movie." (with the cutest look of disgust on his face)
Me: "No? it's not really your kind of movie is it Beau?"
Beau: "Nah!" (sounding and looking just like his daddy :) :) :)

I think my favorite part was coming early and just watching Emma in her element. I love getting to meet her other friends we don't know very well and getting to see our friends and hug their little bodies!!!

today we celebrated our Emma Rose's 4th birthday! since it was Martin Luther King Day, Chris was home from work- hooray!!! to celebrate, Emma got to choose the plans for the day, meals included.
so we...
began the day with cinnamon waffles with whipped cream and orange juice...
(we ate on my pink Fiesta dishes. my mom helped me collect these years ago in various antique shops. I knew they would come in handy some day!!!)
had our nails done at the mall...
went to Chic Fil A for lunch

then off the Sam Noble museum...

after naps, some bike riding with daddy...
after some cheese pizza for dinner, we ate popcorn and watched Toy Story 2!
happy birthday sweet Emma Rose! we love you so much! I can't believe you are 4. it seems like yesterday we brought you home from the hospital.
the Father sees you and He delights in you! He has created you for such a time as this!
